Get the "umodel" to extract them from the game packages, find the plugin for your 3D software to import them into, then you can work on them for Source Engine. This is very short and fast explanation and tl;dr of the guides I can think of.. If you need more information - you can contact me or other modders for that, they also might help.

Also I don't suppose you know where to start with porting models over from enemy unknown? I also wanted the interceptor but I don't know where to start. I know it's unreal 3 engine model. But that's it :p

Could I use the original skyranger from xcom1 instead because this doesn't work?

well I tried to add it to a map and I got a too many vertices error so I guess it's not even possible. Like you can spawn it in, but hammer won't let you add it to a map file.
