Best grand strategy game out there. Other similar historical-based Paradox games are awesome, but I find the much more unique, sandbox-y, and completely sci-fi setting of Stellaris to be more enjoyable while still complex.

May not teach you the math, but gives you an intuition for real orbital mechanics that helps if you go into the space field. Modding not required to enjoy it but can make the game much fuller and prettier. CKAN is the best utility for downloading/installing mods, if desired.

Excellent simulation using a mix of as much real astrophysical data as possible, and procedural generation for everything else.
