Have a look at the spawn codes. There is also a saddle mentioned. So yes, you can mount this dino with and without a saddle.

I don't think that the babies can get color mutations because I just hatched over 100 eggs and no colors but got stat mutations. Can you by any chance update/fix this or am I just super unlucky?

I can't get them to spawn on the island, their species name isn't even showing on my creature locator. why does it work on crystal isles but not here?

Reinstalled a few mods and took off a few "Plus this and that" and now it seems to be working, my guess is that the spawn points were just way too stacked on top of each other.

I've just checked on my Ragnarok Server. There are 15 DodoRex adn 11 DodoWyvern currently on the map. So I don't see any issues. But if even the spawn command isn't working for you, then I think your issue is somewhere else. Either you missed some steps while adding/installing the mod and this leads to the fact that the mod doesn't get loaded at all or you have other mods which interfere.

Downloaded both this one and the Small Dodowyvern one but neither one seems to be spawning correctly on Ragnarok even after multiple Dino wipes or through the Spawn Command

Depends on the spawners crystal isles uses. But you always can add them yourself using official options.
