It doesn't remove something or make something useless. Just sub the mod, turn it on or off in your mods menu ingame
The potatoes probably won't conflict either, it's just weired to have two different kinds of potatoes in your world. You can disable Potato spawns though.
@David You are right, but since it's the same for carrots, I went for the classic DS seeds model for farming.

on a side note, potatos dont have seeds. To grow more you cut a part of another potato and place that in the ground.
