Vehicles spawned while infinite fuel is turned on don't use fuel, so if the engines were designed for non-infinite fuel and are running at their limit, gets spawned into an infinite fuel scenario, it will exceed the temperature limit and catch fire.
The fix is to either turn off infinite fuel, then spawn the vehicle, or set engine RPS slightly lower(like 15) so they run slightly cooler.

Oh and, "unrealistic fine controls" ok sure I get it but that's not realistic and the spinning extremely fast on the spot is?
Except that the engines keep catching fire.
