Honestly, I forgot I even made this until your comment showed up in my inbox, but I'll see if I can make some changes when I have some spare time. Thanks for the inspiration, but I can't promise anything.
And yes, I can't believe we didn't think of Freakin' Valeera at the time...
The list goes on.
Also while Edwin from an cosmetic standpoint looks cool; his story is a bit lackluster. If I recall correctly, he was basically a builder in Stormwind that helped get the place running. Things went to shit and he became a pirate essentially. Vanessa, his daughter has a more interesting backstory (you played Cata so you should know).
But you do you. It's your mod, not mine.
We actually put in extra time to try and research female characters (even though the mod was made in like 2 hours). We wanted to make it as accessible as possible to casual players as well by trying to keep it to characters you would've encountered in your travels (Or to be closer to the truth the ones WE encountered and loved on OUR adventures in Azeroth).
I haven't played the expansions after Cataclysm, so some of the characters you suggest I haven't heard of - but the ones I do recognise I feel would be good additions!
(However, replacing EDWIN FREAKIN' VANCLEEF with Vanessa VanCleef is preposterous in my opinion, even if it's for the sake of diversity)

As you can see, the males vastly outnumber the females here; making the female characters simply awful to choose when playing. In order to play the game in it's current state, the 'gender' question must be house-ruled out.
There are 11 females to a whopping 29 males. Take out 9 of the male characters and even things up please. The list I provided below alone has 12 choices to pick from.
Just to name a few important female characters in no particular order:
-Valeera Sanguinar (actually amazed she isn't here already)
-Sindragosa
-Queen Regent Moira Thaurissan
-Alleria Windrunner
-Queen Azshara
-Elune
-Aegwynn (Medivh's mom)
-Grand Empress Shek'zeer
-Vanessa VanCleef
-Eonar the Lifebinder
-Yu'lon the Jade Serpent
-Yrel (meh, but still a choice)
And those are just off the top of my head.
Males that can be easily cut:
-Baron Rivendare
-Gamon
-Saurfang
-Hemet Nesingwary
-Mal'ganis (Kil'jaeden's here already)
-Gelbin Mekkatorque (only gnome present, may as well)
-Edwin Vancleef
You get the idea.
