the weird organ instrument is a tonewheel organ, with all the drawbars pulled out and a lot of vibrato. this's a pretty good soundfont that has one: https://musical-artifacts.com/artifacts/934 ("Even Bars!" patch). hope that helps somewhat, if you've still got questions i don't mind answering them :]
i use FL studio to do all my composing stuff, and for the revisit tracks i used a mix of BBCSO Discover and EW Symphonic Orchestra instruments, the latter of which is paid. some instruments (like the harmonium) i've used soundfonts because they're very "exotic", and i didn't want to spend too much for instruments i'm gonna use once every blue moon
for mixing, i've done some slight multiband compression and some very dry reverb, as well as some EQing in each insert to better accommodate all the instruments' frequencies
