Step 1: Locating your settings files
1. How to find them
Begin by finding the Starfield folder in your documents directory, which is generated when you launch the game. You can usually find it at:
C:\Users\<your_user>\Documents\My Games\Starfield

2. Editing the files
Now, there are two files you need here one is the StarfieldPrefs.ini, and the other is StarfieldCustom.ini, which probably you don't have and you need to create it for some of the settings below.

IMPORTANT: I've noticed that there are some settings that don't work if put in the wrong file, that's why you need both. So be aware of the correct file to put the corresponding settings.

For the first, right-click on the StarfieldPrefs.ini file and choose "Edit." If you are using Windows 11, you may need to click "show more options" to reveal the "Edit" button. Or open it on your File editor of choice, for example VS Code.

For the second, right-click inside the folder and choose "New" > "Text Document", name it StarfieldCustom.ini and then open it with the editor of choice.

Step 2: Speed Pitch and Yaw
Inside your StarfieldPrefs.ini file, search for the [Controls] section.
Then, add/modify the following four lines with the recommended values:
[Controls] fIronSightsLookSpeedPitch=0.9 fIronSightsLookSpeedYaw=0.9 fIronSightsPitchSpeedRatio=0.9 fPitchSpeedRatio=0.9 fLookSpeedPitch=0.8 fLookSpeedYaw=0.8
Step 3: Mouse Heading Sensitivity
1. Add a new line
Inside StarfieldPrefs.ini, add a new line and paste in the following text under same [Controls] section.
[Controls] fMouseHeadingSensitivity=X

Here you have two options, either use your sensitivity from past games (like FO4) or convert your sensitivity. FO4 sensitivity should do the trick, but if you don't have it or you want to adjust it again, follow the next steps.

2. Convert your sensitivity
In order to convert to your preferred sensitivity, I've found mostly valid a formula to convert the sensitivity from other game to Starfield.

First, get your Aim Lab sensitivity. If you don't have Aim Lab, find a comfortable in-game sensitivity in another game and use a sensitivity calculator to convert to it (considering your mouse DPI), for example: https://gamingsmart.com/mouse-sensitivity-converter/

Then, use the conversion formula:
Starfield sensitivity = (Aim Lab sensitivity) x 0.2

Example:
If your Aim Lab sensitivity is 0.15, your Starfield sensitivity becomes:
(0.15) x (0.2) = 0.03

3. Apply your mouse sensitivity
Once you've know your Starfield sensitivity, enter it into the five lines you found or created within the same chosen settings file, under the [Controls] section:
[Controls] fMouseHeadingSensitivity=0.03

4. Adjust as needed
After that, if the sensitivity is still too high/low, I often recommend multiplying/dividing it by 2, seeing what happens, and trying again. Then adjusting as needed to intermediate values.

(Personally, with a mouse with maxed out setting of 26K DPI, I use a very low value of 0.001).
Step 4: Ship Sensitivity
For this I think it depends on your personal preference.

However in my case I've tried using around 20x-25x the value of my mouse heading sensitivity, and for me it does the trick.

For example, StarfieldPrefs.ini:
[Controls] fMouseHeadingSensitivity=0.0010 fShipReticleMovementSensitivity=0.025

You can try it too and see if it works for you, and then adjust it more if needed.
Step 5: Normalize Mouse Sensitivity
To normalize the vertical and horizontal sensitivity, add/modify these values on the [Controls] section inside StarfieldPrefs.ini:
[Controls] fMouseHeadingYScale=X/2 fMouseHeadingXScale=X

Where X is any of these values, based on your Aspect Ratio:
0.03738 for 16:9
0.042 for 21:9
0.028 for 4:3
0.0336 for 16:10

For example, for 21:9 aspect ratio of my 3440x1440p 34" monitor:
[Controls] fMouseHeadingYScale=0.021 fMouseHeadingXScale=0.042

Step 6: Disable Mouse Acceleration
Inside the same file, add/modify the following lines in the [Controls] section in the StarfieldPrefs.ini:
[Controls] bMouseAcceleration=0

Also, if you want more responsive movement, under same section:
[Controls] bDampenFirstPlayerControls=0 bDampenThirdPlayerControls=0
Step 7: FOV and Camera Settings
In order to fix the FOV, specially when playing on wide screen, add/modify the following lines under the corresponding sections of the Inside the settings file:

1. Display settings, inside StarfieldPrefs.ini:
[Display] fDefaultFOV=110 fDefaultWorldFov=110 fDefault1stPersonFOV=110

2. Camera settings, inside StarfieldCustom.ini:
[Camera] fFPWorldFOV=110 fTPWorldFOV=110

3. Flight Camera settings, inside StarfieldCustom.ini:
[FlightCamera] fFlightCameraFOV=110

NOTE: Personally, I'm using the value of 110 with an ultra-wide monitor of 34" with 3440x1440 resolution

4. There are also some advised additional flight camera settings, useful to make better the 3rd Person view of your ship, inside StarfieldCustom.ini:
[FlightCamera] fFlightCameraOffsetBaseY=-75.000 fFlightCameraOffsetBaseZ=9.110 fFlightCameraSpeedOffsetMinX=-1.500 fFlightCameraSpeedOffsetMinY=-35.000 fFlightCameraSpeedOffsetMinZ=-1.500 fFlightCameraSpeedOffsetMaxX=1.500 fFlightCameraSpeedOffsetMaxY=0.000 fFlightCameraSpeedOffsetMaxZ=1.500 fFlightCameraOffsetMaxLandedDistance=200.000 fFlightCameraOffsetMaxLandingHeightOffset=200.000

For the same, add these camera settings, inside StarfieldCustom.ini:
[Camera] fDefaultShipAutoVanityZoomScale=4.500

Step 8: Display Settings
1. Exclusive Full screen
If you wish to play the game on just full screen instead of full screen borderless mode, you can try with these settings, inside StarfieldPrefs.ini:
[Display] bBorderless=0 bFull Screen=1

2. Anisotropic Filtering
The game uses anisotropic filtering set to 4 by default, you can modify it inside StarfieldPrefs.ini:
[Display] fMaxAnisotropy=16

No performance loss noticed here.

3. Disable film grain
Although this can be changed in-game, I want to add it here because this is one of the things that changes a lot the way you see the game. So you can either set it to 0 inside the game settings / display, or modify the value inside StarfieldPrefs.ini:
[Display] fFilmGrainIntensity=0.0000

4. Disable TAA
To disable the Temporal Anti-Aliasting, simply modify inside StarfieldPrefs.ini:
[Display] bTemporalAA_idTech7=0
Step 9: Spaceship Builder Settings
You can also make some modifications to elevate your ship-building process, offering features like accelerated zoom capabilities, smoother panning and rotation, reduced snapping distances, and an expanded selection of available flooring options (the default is 25).

Inside StarfieldCustom.ini:
[Spaceship] fShipBuilderMouseZoomSpeedMultiplier=4 fShipBuilderGamepadZoomSpeedMultiplier=1.2 fShipBuilderZoomMinScale=4 fShipBuilderMaxFloor=50 fShipBuilderMinFloor=-50 fShipBuilderMousePanSpeed=2.25 fShipBuilderGamepadPanSpeed=45 fShipBuilderMouseRotationSpeedMultiplier=9 fShipBuilderFloorChangeDuration=0.35 fShipBuilderEquipmentSnapDistance=1.5 fShipBuilderSnapDistance=1.75

You can also elevate the tolerance of Ship Building, by using this setting in StarfieldCustom.ini:
[Spaceship] fShipBuilderModuleOverlapTolerance=X

Where X can be:
-0.25 for vanilla tolerance
-1 for more tolerance
-5 for huge tolerance
Step 10: Gameplay Settings
These are gameplay settings that may improve your game experience.

1. Autosave more often
If you wish to autosave more often, add/modify these settings with the value in number of minutes, inside StarfieldPrefs.ini:
[SaveGame] fAutosaveEveryXMins=2.0000

2. Reduce time grabbing items
If you wish to reduce the time before you grab an interactive object, or a basic object, modify these settings, inside StarfieldPrefs.ini
[Controls] fQCZKeyDelay=0.3 fZKeyDelay=0.15

3. Show only active quests
To avoid way-point mess, enable this setting, inside StarfieldPrefs.ini
[Interface] bShowOnlyActiveQuestTargets=1

4. Disable Aim-Assist and Magnetism
Disables aim-assist and magnetism of bullets. To enable it, inside StarfieldCustom.ini:
[Combat] bAimAssistEnabled=0 bMagnetismEnabled=0

5. No Boost Shaking
Removes the camera shaking while you boost with the ship. To enable this setting, inside StarfieldPrefs.ini
[Display] bPilotCameraShakerEnabled=0

6. Enable Press and Hold Jetpack
instead of being single press. To enable it, inside StarfieldCustom.ini
[Boostpack] bUsePressAndHoldControls=1
Step 11: Other Settings
These are other settings that may improve your game experience.

1. Disabling intro
If you wish to disable the intro, the menu delay and the message of the day, add/modify these settings inside StarfieldCustom.ini
[General] sIntroSequence=0 uMainMenuDelayBeforeAllowSkip=0 bEnableMessageOfTheDay=0

Unfortunately, this doesn't disable the initial text and Bethesda logo, only gives you the opportunity of skipping the later animation. For that, you would have to download some mod.
Last step: Save and Enjoy!
Save your changes on StarfieldPrefs.ini and StarfieldCustom.ini files and enjoy!

- The content of this guide was originally based on my personal settings of Starfield and previous Bethesda titles. Also I've been adding other settings I've found around.

Question (a BIG question, for me):
Strangely, it seems no one is interested in Starfield having a truly directional movement camera, versus the nanny-cam that is tethered to your back....
Is there a line of instruction that can untether the camera from your back - as an example, think "Fallout 4": when you moved without aiming, the camera did not stay frozen to your back.

Disabling Auto Ship Acceleration/Auto Throttle in StarfieldCustom.ini
