Which models and materials from which packs would I need to use?

well you can easily acquire the cs source content. if its for gmod it works for sfm as well. those folders you can get arent .gma they are directories of the game assets. you only need models and materials. The props otherwise dont work. they arent packed into the map and they really require the models from cs source. Several maps and models for both gmod and sfm use ressources from several source games anyway.

Is there a way to use the props without having to get CS Source stuff? I've been trying to use it and now I can't even open SFM after trying to get the assets I need to fill out the error models

looks like you need cs source. not cs go or cs 2. cs source.
