@Scari You may be able to extract the vpk into a folder named "custom" nested in your root directory under 'hl2' or 'hlvr' I'm unsure.

I know it's weird that there are no tutorials about this. Try to find tutorials for replacing weapons in Counter-Strike: Source\Team Fortress 2, as example. There is exactly the same pipeline of work with model replacement on the Source engine.

Guys it's not actually hard to simply copy and paste this workshop source file from ep2 to episodic and hl2. Just make a "custom" folder in episodic and hl2 (not episodicvr/hl2vr) and your are done. To make it easier just subscribe to this as the last thing in the workshop then look for steam, steamapps, workshop, content, filter out the files by date by clicking "date modified". Select the first folder (Mine was 658920). After that filter the date of the folders created again by clicking "date modified" then select the first folder that should be called "content". All workshop source files are called that. Now simply copy and paste that file into "episodic/custom" and hl2/custom" and that should make it work just fine on ep1 and hl2.
