The trick
In order to take out only the sword with no secondary weapon all you need to do is to hold the sheath weapons button and when animation is about to end you should climb any obstacle.
Keep in mind that if you swing your sword the secondary weapon will be taken again

you can now just sheathe your weapons and hold m2 to prepare a power to have the offhand available, or prepare a power attack with the sword to have only the weapon out
