Sure, it adds challenge, but that doesn't necessarily mean the challenge you've added is entertaining or worth the player's effort. I would seriously recommend reconsidering and reinstating the other reversing features.
Stop and reverse should stay gone, though. That's a feature that's always had problems with Signal Stopping Penalties...
Those are very short levels, which are called "challenge", so you likely need to try more than one time. Even I sometimes need 5-10 tries to get perfect score. It's intended to be difficult. Just keep trying and you will get the perfect score.

Most of all I like the fact that there's a lot variety. For me the difficulty is easy. (Scored 356; forgot to turn around RB3 on time). You could give the dispatcher some more work by putting in manual signals.
