As for getting sunken highways/roads in the editor: I use the mod called: 'Fine Road Tool 2.0.4 by Klyte 45'. This mod gives you 5 modes of building roads. These modes are: normal, ground, elevated, bridge, tunnel. To get a sunken road, you have to select the option 'ground'. This forces the ground to follow the road. So when you build an elevated or sunken road when this mode is selected, the ground follows. So to get a sunken road, simply select the road you want to build, make sure you have the 'ground mode' on. Then by pressing the page-down key you can select the desired depth. And then simply build the road.

(ps, how do you get the "sunken" roads in the Asset Editor? I can't figure out how to use landscaping tools)
