As for speed, then I know two options. There are some bugs/xml edits you can do like the "drag glitch" if it is still a thing anymore like it was a year ago, so not really sure about that, but also that glitch removes custom fuel tanks and behaves weird in the air.
The other way like this vehicle does is that heigher weight to the vehicle, like lots of weight blocks, will increase the "soft speed limit/cap" of the vehicle such that you can keep on adding thrust power. Then here I used a lot of exhaust, but on newer vehicles I use a decent amount of ducted fans with some "optimal" gear ratio to jet engine, so jet exhaust would only be for visuals then.

Now I know some xml editing that would fix the issue, but I'm mainly doing Lua stuff now.
