set two young adult people in your nation to an animal culture, for example, type in:
"characterinfo"
then hover over one of the two characters. there should be an ID for them.
"culture *ID* *animal culture*
to find the animal cultures, you can look at this article about all the cultures in the game here:
https://ck2.paradoxwikis.com/Culture
if you did it right, the character's culture should be the animal culture you choose!
repeat this with the other character. make sure they are a spouse of the first.
the two characters, if they have offspring, should give birth to a character of the animal race. this seems to work because the animal races also take into account parent culture, so if one or both of the parents have an animal culture, it will influence the ethnicity, which dictates race.
