Potatoes, originating over 7,000 years ago in the Andes Mountains of South America, have a rich history as a staple crop. The Incas were among the first to cultivate and appreciate these tubers. George Crum, a chef in Saratoga Springs, New York, invented potato chips in 1853, responding to a customer who found his fried potatoes too thick. Meanwhile, the world's largest potato, weighing a staggering 8 pounds 4 ounces, was grown in the UK in 2011.

Beyond the kitchen, potatoes have intriguing uses. You can create a simple battery by inserting metallic objects into a potato, and researchers are exploring potato starch as a basis for biodegradable plastics, potentially reducing the environmental impact of traditional plastics.

Potatoes are not immune to climate change; shifts in temperature and precipitation patterns can impact yields. The International Potato Center (CIP) in Lima, Peru, strives to address these challenges through research to improve potato and sweet potato cultivation globally.
