I tried 1600/1400/1200/800/400 DPI and realized that I have more stability and better aiming at low sensitivity.
I have a claw grip, I move the mouse with my whole hand, not my wrist or fingers, for me this turned out to be the most stable.
To understand this I tested different grips, consciously giving my body time to get used to it, I spent 100 hours after each change in sensitivity/grip to understand what works best for me.
