Coming from someone who played the original version of skyrim with over 200 mods, texture replacers everywhere, and a harsh ENB, I can say that I am not disappointed.

Stability
was an issue at first, but with the 1.2 update the game hasn't crashed at all (besides my pathetic attempts at modding)

Graphics
are okay at best, and a washed out mess of greens and grays at worst. If you want a good looking game, make sure to get the Vivid Weathers mod and Realistic Lighting Overhaul. (As well as many other mesh/texture mods) The graphics don't have the same potential as the oringinal game, with the ability of ENB's to modify the game engine's lighing severly limited ATM (the ENB developer said that ENB presets wouldn't be as good as the ones in the original game). You can still get a really nice looking game with the aforementioned mods and a bit of tweaking graphics settings. Sadly, nothing similar to what we could do with Skyrim 32bit.

Performance
is great. 60fps everywhere on max graphics settings with a core i7 4790k, GTX 970 and 24 GB of ram. I get dips to about 40fps occasionally but my fps is usually steady at 60.

Everything is the same.
If you've played the oringial Skyrim and its DLC's, then there is no new content for you to explore except for that which is provided through mods. I played vanilla, boring, ugly Skyrim on PS3 for over 200 hours before coming to PC and destroying my ps3 save file with an immense amount of mods. I purchased SE bacuase I wanted a new experience playing skyrim "the right way" with lots of mods and community DLC. the first time I played Skyrim, I introduced mods halfway through. This time, mods play a role form the start.

To me,
Skyrim SE is all about the experience and nostalgia, and remembering random bits of info and lore that I forgot over the years. I knew I wasn't getting anything new, and I bought it anyway. Replaying a game that I did everything in years ago and forgot about is enough for me to buy this. (Also the fact that it runs on the same version of the creation engine as Fallout 4 which doesn't crash every 5 minutes with 100+mods unlike the OG skyrim)

Not the game in the videos displayed on this page. If it were, I'd likely keep it. I'm refunding because the game is horribly buggy, the graphics are primitive, It's really boring, and because the Developers lied. No multiplayer.

I had a life at one point. After the first 20 hours of playing ESO it had already been sucked out of my body and fed to Molag Bal.

Tons of content. Still haven't reached the end of the main story after ~130 hours and there are tons of quests left in my current level zone. You could play this game for a year and never run out of content with the tons of dungeons, lorebooks and achievements to collect.

The game is nothing like Skyrim. If you want Skyrim online, there is a mod for that. If you played Skyrim and not ESO, just don't anger the guards.

EDIT: 4 years and 400 hours later, still don't think I've done half of what this game has to offer.
