I realize that I can't force anyone to appreciate my work, but I certainly would prefer appreciation of my efforts to the alternative.
Adding things to coffee takes away from the flavor of the coffee itself by adding emphasis on other flavors. I put a lot of effort into the coffee. I didn't grow the sugar cane, and I didn't milk the cow. If I did maybe we'd be having a different discussion.
I pride myself on roasting good coffee, not too acidic, getting beans from a good origin so I can coax the right amount of sugars to caramelize in the roasting process without sacrificing the origin flavors. It shouldn't need anything (although I totally understand that some people like to add things).
Anyway, it's a totally narcissistic trait, but roasting coffee is something I'm moderately good at, and so yes I might be offended if someone prepares the beans I roast in such a manner that they can no longer distinguish the flavor.
