What makes it weirder is that I've never had the issue myself so I can't replicate it.
In a clean file with only ML & this mod active, I played as Haesteinn in 867, his son Ragnar had the rowdy trait and was educated from the time he was 7 till 16 by a berserker that I invited to my court as a knight with a 3 star prowess education and 26 prowess stat, and on top of all that Ragnar got the event to fire where I could choose to change his education to martial in his teen years or let him keep going with prowess and an outcome bonus, so I think there was close to nothing I could have done to try to get him a better education...
@flx_95_ @cat_soup @KiwiBladewing Hopefully this update should fix your issues. From what I tested I don't get only 1 star education anymore unless I changed their education very late in their childhood.
