Having had a little look at the xdR thing it seems that it'd be a simple implementation, given that the animation slots are the same so it should be just copying and pasting to get it implemented for the rest of the characters once I've figured it out for one character.
Although the extended mag will clip through the left hand given that all the characters hold their pistol cup and saucer style (except for Ellis whom one hands it).
That said I do wonder how xdR animation mods work in multiplayer, because I usually am the host when playing with friends.
Maybe I'll even get around making that version of this mod where it's dual wield in third person (Been meaning to get properly into L4D2 modding for YEARS).

Have you perchance considered making a version of this where the pistols remain akimbo in third person?
I might look into how [xdR] works to see how swapping the third person dual wield animations with the single pistol animations.
That said the physics of the pistol models seem kinda wonky when dropped to the ground.
