I have little to no coding experience and I am having trouble getting this to show on an LCD display. I found this script from your youtube video but the code example in your video does not seem to match the downloaded version here. Any assistance would be greatly appreciated.

Found another small thing where it counts gravity generators as GEN and even if they are turned off it shows as being on.

Not at the moment, but that's a good idea, I'll add it to the TODO for the next version.
(Two other obvious ways are: only show one bar for total fullness and ignore relative amounts, or show all amounts relative to 100%, which means with multiple types of stuff in your inventory, none of the bars will reach 100%. But I don't like either of these.)
Your inventories can hold 1000 kg in total. You have 750kg of iron and 250kg of Stone. In total you have 1000 kg, so one of the bars will be at 100%. But among the bars, there is three times more iron than stone, so the iron bar will be three times longer than the stone bar. I always use the longest bar to show the total fullness. In this case the iron bar will be at 100% and the stone bar will be at 33%, because that's three times less.
