Betting I could run it decently now, since I've upgraded to an i7-4790, GTX 1080 FTW, and 4x8GB DDR3-1600. Actually putting everything together though... takes... SO much time. I went through the old mod list and actually found some of the mods that had been delisted from Nexus and elsewhere using Archive's Wayback Machine. Still have them all compressed in a zip file for archival purposes.
Anyways. Thanks for all your work on this! And other mods over the years. I'm sure it takes a lot of time typing up detailed guides for the massive Bethesda overhauls.
Poking around per your tip I found '\Data\menus\prefabs\darn\hudmainmenu_config.xml' and changed the values there and it seems to have worked proper.
You can edit the xml files of DarniFied UI. Or are you referring to some other settings? I'm not sure I understand correctly.
You are right!. I never noticed the eye disappeared.
I made a new mod "Dynamic Crosshair for DarNified UI". That fixes the problem. It also moves the eye back in the center of the screen. - I never liked it in the bottom corner where DarniFied UI put it.
I made a few other small changes as well:

Including a small change the the ENB.. Since I was at it.
Also, might not be a bad idea to add a note to users in the guide that dynamic crosshair removes the sneak eye entirely. Ended up deactivating that one because I couldn't figure out why the eye wasn't showing up after enabling it in Darnified UI
