The Mammoth is the optimal Refining Vessel for smaller mining operations. Rather than having to fly to gigantic refining stations in order to refine precious metals and materials the Mammoth enables smaller corporations to process minerals directly at the mining site. In addition to that a great advantage of the Mammoth is that it is mobile, which in turn greatly increases flexibility of a mining operation. The Mammoth also slightly reduces the need of a transport vessel, which would carry the materials from the Refinery to the consumer. The Refinery Vessel is generally crewed by 3-4 people in order to run at peak efficiency. The Mammoth is also capable of carrying and support 4 mining drones that collect materials and ores for the refineries. Minimal defenses enable the crew of the Mammoth to defend themselves from smaller raider or looting parties, if you were to fly in more unsafe space AOE advises you to bring escort craft in order to protect the vessel.
