Second hardest would probably be Jumper's 1st coin. It's your first experience with a flipped rocket, and it takes quite some precision and effort to get it consistently correct, especially since again, it's your first experience with a flipped rocket chronologically.
Time Machine's 2nd coin is the third hardest, I'd say. It's just awkward, because you have to thread the needle accurately, which can be a pain in the arse at times.
Again, I'm not saying these are the hardest in the game. I'm saying that in this list, I think those three were the hardest to get, in my opinion.
