• It is recommended you set your MAX FPS to 120 (or lower) in Graphics Settings.
  Doing so solves most of the issues with high FPS.

  You can find the potential FPS issues below.
  
  
• All Games - Running above 120 FPS will cause Spyro to slide around without any input.
  
• Spyro 1 - Magic Crafters World - Alpine Ridge - Near the beginning of the level you may need to temporarily reduce MAX FPS to 30 or set to Unlocked to proceed. This area takes about 1 minute to progress through after which you can return to playing at 120 FPS.
  If the druid isn't transforming the ramp to stairs, temporarily reduce FPS to 30 or set to Unlocked
  If this door appears stuck partially closed, temporarily reduce FPS to 30 or set to Unlocked
  

Unfortunately Spyro doesn't have native FOV settings.
Thankfully you can increase FOV with the freeware program flawless widescreen.
This program allows you to increase FOV in many games without FOV settings.

For Spyro to work with Flawless Widescreen, you'll need to install this user created plugin/mod.

• Open the downloaded plugin folder and copy to the main Flawless Widescreen folder here
  
  C:\Program Files (x86)\Flawless Widescreen
• Launch Flawless Widescreen and make sure the fix is enabled, which will remove the black bars and allow for FOV adjustment through the UI or hotkeys

Disabling mouse smoothing will give you more responsive camera controls.
