Short version: try updating your graphics card driver.

Long version:
When you play the mission The Fine Joys of Tobacco does the game crash around the time after you burn the field and before the horse cutscene? Does it seem to crash in the exact same spot? If so you most likely had the same problem as me and need to validate and update your graphics card drivers.

I did validation and updated my graphics card drivers that fixed it for me. so try updating your graphics card driver if you haven't already. I got version 551.23 for my NVIDIA card.

I think it has something to do with the cutscene with arthur hiding, it will crash if he hides and the camera is the gameplay camera and not the cutscene camera. My guess is this causes the next cuscene to crash the game which is the horse one. Once I updated the drivers and the validation, I saw this small change. Normally a game won't change at all when updating your graphics drivers unless there is some problem.
