I've done some tests, and the results were the same
About fish which you cannot catch - I have no idea what can't be caught. The problem is that fish spawns are completely random, so you in theory can catch all of them. But, I have not seen deep water species at all.
My theory is that you need to hunt for it underwater, but I spent like 2+ hours diving without any good results, I have only seen the same fish species as usual, also it's very dark on the depth and the progress is quite slow.
Beginner said that devs will remake fish spawn according to fish habitats, but i have no idea then it will happen.
