Introduction
I was curious on how to do this and ended up finding a way to do it. Since I did not see any other guide on Steam in English detailing how to disable DoF, I figured I would make it. Hopefully it helps you!
Mod Manager (build it yourself)
Since NFS Unbound uses Frostbite engine, you will need Frosty Mod Manager.

To get Frosty Mod Manager, you have two options. You can build it yourself, or you can download an already-built version. By building it yourself, you can guarantee that it is safe and contains nothing malicious, but downloading it from somewhere else presents some risk. The version that works with NFS Unbound is Frosty Mod Manager 1.0.7.

How to build (credit to u/ahurkatolto on reddit):
Clone the official Frosty repo: https://github.com/CadeEvs/FrostyToolsuite/tree/1.0.7

Install/Modify Visual Studio 2019-2022[visualstudio.microsoft.com], and make sure to have both .NET and C++ desktop development selected, and on the right check Windows 10 SDK 10.0.18362.0

Open .\FrostyToolsuite\FrostyEditor\FrostyEditor.sln inside the directory you cloned the repository into.

DO NOT click the green triangle, instead in the Solution Explorer tab on the right (if it isn't there, Ctrl+Alt+L), right click Frosty Editor, and Build

If it fails, individually build everything except for the Editor and ModManager, and then you should be able to build the Editor and MM (if it still fails, look at the error message, it'll tell you if it needs something to be built before it)

In the Solution Explorer, right click and Build the Plugins folder (Keep an eye out for errors here as well, you should get 26 normal + 6 fifa plugins at the end)

How to use:

Editor: .\FrostyToolsuite\FrostyEditor\bin\Developer\Debug\FrostyEditor.exe

MM: .\FrostyToolsuite\FrostyModManager\bin\Developer\Debug\FrostyModManager.exe

Mod Manager (pre-built download)
Pre-Built Download is available on this guide if you wish, refer to highlighted section in image below for the correct link: https://steamproxy.net/sharedfiles/filedetails/?l=czech&id=2968404009

[Note: I used the pre-built version from this guide, and I have had no issues]
Remember, the version that works with NFS Unbound is Frosty Mod Manager 1.0.7.
Download Remove DoF Mod & Install
Go here to download the Disabling Depth of Field mod by XIOOO1 (note that a Nexus Mods account is required):
https://www.nexusmods.com/needforspeedunbound/mods/91?tab=files

Put the .fbmod file into the "NeedForSpeedUnbound" folder in the "Mods" folder within your Mod Manager build directory, then open Frosty Mod Manager.

Now with Frosty Mod Manager open, a window should pop up where you can select a game.
If NFS Unbound isn't already showing up, you can point it to your NFS Unbound installation by clicking the "Add" button.
(You can check where your NFS Unbound is installed by right clicking on the game in your Steam library -> Properties -> Installed Files -> "Browse..." button)

The Mod Manager may automatically find your installation, that's what happened for me.

Click on the NFS Unbound icon and then click the "Select" button. It will load and once complete, you should see something like this:

As long as there is a checkbox next to Disabling Depth of Field, then you are good to go!

Load up the game and Depth of Field should be gone.

You forgot to mention (or maybe you might have not known) that the pre-built version is a bit newer than the one you build from CadeEvs' GitHub repository, as the pre-built one has native Steam support (meaning you won't need DatapathFix) and it's more or less future-update-proof, as there had been occasions (especially during Volume 3 update) when Frosty just didn't work because of a specific .cas file missing in game assets.
