you can do that in a way
use a debris event on a paper note in kismet
pick it up to read it left mouse
when you drop it with right mouse on the dropped output of the debris node spawn crumpled paper trash object from the note debris object then very quickly on the dropped output of the debris node with say a 0.1 second delay hook that to a destroy node that deletes the paper note
option to play a scrunch up paper sound on that dropped output too
then one should be able to scrunch up paper notes after ya read em
The crumpled paper idea I'm not sure there are any default object classes I know of that change model when clicked. Maybe if I find something like that, I can.

I saw you updated it, adding some of the different zed types and the like, really cool stuff.
One suggestion I have (And I don't know much about the editor so I don't know if this would be possible to do this without some heavy scripting), but it would be cool if when you press and hold left click on one of the pieces of paper scattered across the map that it could transform them into one of the crumpled paper models from the base game to make it easier to fill up bins.
But I'm having an issue with all of the zed bodies missing their textures. They just have the white/blue squares texture. Tried verifying files so far, but I'm not sure what else to do.
