Browse to your OMD2 install_dir.

Now, open data.zip with the archiving tool of your choice.
You will need to edit controls/DefaultCenter.cfg, highlighted in the xarchiver screenshot below.
Set your desired FoV value
This is straightforward.
Find the line
CameraDefaultFOV=
and append your favorite number.
