When you get to the plate swim under it, Press Shift 5 times after jumping out of the water, Once your level with the plate, Left Click

Once you are in the air the direction of the shark-head can be controlled by your mouse. Make sure it stays in the direction of the plate when pressing shift.

Wow thank you!, i had no idea you could keep pressing shift to jump higher!
