After completing a portion of the side quest "Hand to Hand". Some of the moki you give items to will come back. One that I found very interesting is this Moki. You find him in the Mouldwood Depths.
He asks for a lantern, once given he gives you silk. If you return back to the Wellspring Glades you can find him with a little shop. He wont sell you anything but its pretty awesome.

Another quick part of the Hand to Hand quest has a moki asking for a hat. Once given he wears it. And as someone with 8 PhDs in Hats I can confirm that is a awesome little hat.

Up in Baurs Reach theres a little moki with a giant campfire. He is also part of the Hand to Hand quest requesting some soup. You can blow his fire out with Kuros Feather and you get some semi sad but semi funny text.
There is also a fire in the Wellspring Glades, you can use Kuros Feather to make the fire send out a stream of air going up that stays forever, something great for getting around the Wellspring Glades early on.

Throughout the area of Niwen you can find cave painting made by the Moki.
