I did almost the same as Demajen (720p screenshots stitched together), but with a few changes:

I spent a lot of time making sure the parallaxes were preserved, sometimes even using some of the game's assets, so I hope someone finds it nice to look at;
The game's levels are made with Tiled, so I used it to open the level files to align all the screenshots with a full map overlay of sorts, which saved a lot of time and improved the accuracy and stuff.
If necessary, I would make a copy of the map and remove the parallaxes and some of the fog with Tiled to help with cropping. It helped sometimes if I had to modify parallaxes behind trees or more complicated geometry.
