When it comes to the second phase of the Abyss Watchers I found it way easier to dodge towards the Abyss Watcher and not away from him. He has a big ass sword with fire so the hitbox is incredibly big. Trying to roll away made me get hit from the fire of his sword or the tip of it countless times. He has big combos as you said but after a bit of practice dodging towards him will reward you with an easy backstab or 1-2 hits.
makes some fights easier than other such as the storm king doing physical damage making the fight trivial as you can just back up for a second to heal
but other fights not so much as if they do a different type like dark damage you die very quickly
