Dynamic props are used for things you want to have animated and are usually attached to something else to help them move.
Static props are just that; static. so those can't be used since people need to move around.
there is a secondary physics prop called prop_physics_multiplayer. It is meant to help reduce lag from issues with physics and collisions (usually when the map is very big and has lots of stuff in it). I tried this early on in the map, but found the way it handled collisions to be pretty terrible for prop hunt, so I changed them all to just the standard physics props.
