EDF5 in multiplayer has 1-111 missions. Anyway to answer your question moving onto a new difficulty always sets you back weapons to lower levels than what your using at end of the game but about midway through missions you'll be using weapons higher level than what end of previous difficulty was allowing. Yes you can play the game in order at least in offline, and in online too tbh I've seen others do it, but if your playing online with 1 or 2 people its suggested that you find an easy mission on inferno and grind inferno so that you can use weapons that mode gives you earlier when you start to do inferno from the beginning.
