There aren't as many dungeons as expected though
Stuff to find/craft and customise, vast character builds
The game mechanics are almost the same as in The Witcher 2, easy to learn but takes some time to master.

👉 Ironically this is the difficulty I felt when playing on Death March .
The first 7 levels might prove to be quite hard but after some grinding (and also getting used to the game's mechanics) you shouldn't struggle with quests that are not more than 5 levels above your character level.
Basically the higher the difficulty, the more you will need to grind
