1½ cups (225 g) frozen raspberries
¼ cup (60 mL) maple syrup, plus more to taste †
4 lemons, juiced
4 cups (960 mL) cold water
2 cups (222 g) ice cubes
Optional garnish
lemon slice
fresh mint leaf
Directions
Add the raspberries and maple syrup to a saucepan, cooking for 3 - 4 minutes at a gentle simmer.
As the raspberries start to soften, use the back of a wooden spatula or tamper to mash them.
Place a sieve over a pitcher to strain the raspberry mixture, using the back of a spoon to press out as much liquid as possible. Let this liquid cool off completely, ideally in the fridge.
When cooled, stir in the lemon juice and water.
Add ice to glasses, and pour in the lemonade. Taste test and add more maple syrup to taste if too tart. Garnish, and enjoy!
Notes
† If the drink is too tart from the lemons, add more maple syrup to balance it out.
Storage
The pink lemonade can be stored in an air-tight mason jar or glass bottle for up to 2 - 3 days.
