Ingredients:
250g crab stick meat (surimi), chopped into pieces.
1/2 red onion, finely chopped.
1 red bell pepper, diced.
1/2 pickled cucumber, diced.
2 hard-boiled eggs, cut into eighths.
3 tablespoons of mayonnaise.
2 tablespoons of plain yogurt.
1 teaspoon of mustard.
Salt and pepper to taste.
Fresh parsley, chopped for garnish.
Instructions:
In a large bowl, mix the crab stick meat, red onion, red bell pepper, pickled cucumber, and hard-boiled eggs.
In a separate bowl, prepare the dressing by mixing mayonnaise, plain yogurt, and mustard. Season with salt and pepper.
Pour the dressing into the bowl with the other ingredients and mix thoroughly to coat all the ingredients with the dressing.
Transfer the salad to the refrigerator for at least 30 minutes to chill and allow the flavors to meld.
Before serving, garnish the salad with chopped fresh parsley.
