15 MINUTE CHANA MASALA
SERVES 3
-1 onion
-2 cloves garlic
-a piece of ginger
Chop all finely.
Sauté the onion and then add the ginger and garlic
-1tsp each garam masala paprika ground coriander
-1/2 tsp each cumin and chilli powder
-1 tbsp vegan butter
Fry for a further 2-3 mins
-3tbsp tomato paste
-1 can (220g) cooked chickpeas (include the water from the can)
-60ml coconut milk
Let it simmer for 5 mins
Finish with cilantro/parsley and lemon juice
