The previous game didn't have the ball go crazy with a slight tap of the putter like this one does. It was a bit wonky at times, but not nearly this level of hockey puck on ice craziness.
Tempo, imo, removes the immersion i got from a game in TGC1. Instead of relaxing with a nice game, i'm constantly stressing and monitoring my swing mechanic. I don't expect to "crush the ball down the middle of the fairway" ( i slice much more often than i'd care to admit) but neither do i expect to have to base my gameplay around, "Fast, Perfect and Slow" rather than just my own skill with my controller. I spend more time looking at the bottom right of my screen checking my Fast, Perfect, Slow rating rather than just watching and enjoying the game.
I'm only using the Standard clubs as that's what the game default is and i figured that was good enough for me.
Putting - This has been one of the biggest areas of praise from fans of TGC1. Not a whole lot has changed here so it surprises me that you don't like it if you enjoyed TGC1.
Tempo - This was added to add more depth to the swing mechanic. I suggest taking same time on the driving range to experience this and perhaps with the standard clubs. Much like real golf, just because you did a full swing, it doesn't mean you're going to crush the ball down the middle of the fairway.
Elevation - I can't speak much to this situation much as I'm not fully aware of the course settings, club settings or shot type and outcome that you were using.
I hope you take some time to get more familiar with the mechanics as I believe it's much more engaging that TGC1 was and hope you see that after time as well.
