Why would anyone in their right mind spend so much time on a game?

Because it can be a benchmark how you approach learning and mastering a skill.

Its easy to get into it and understand it on a surface level, but even if your mechanics are solid, it still got the same depth a chess board. It can provide seemingly limitless combinations of action and reaction, making it always feel unique.
A mechanical system, that will always be prone to human error. You stressed? To bad, the tension made you overshoot.
Feel relaxed today? To bad, your reaction time was 100ms to slow.
Wanna play all night? Welp, the tiredness made you make one wrong keypress and your gun wasnt precise in the last round of a match.

As long as humans are imperfect, CSGO will have a place in their hearts.
