You can ask on the various Souls forums. I would respond if I have anything constructive to write.
The servers being offline don't affect me at all. I don't like PvP and I usually play offline for challenge runs. When the servers were first offline, I used the opportunity to do an SL1 run of DS2: SotFS because that game doesn't have an offline mode. Every time you launch the game, the game would log in to the DS2 server. The servers being offline meant that I didn't have to worry about being harassed by other players while I was doing an SL1 run in DS2. The challenge run is done already. I have also been doing an SL1 run of DS3. It's completed a moment ago, a dozen minutes before your post. As for Elden Ring, I will wait a few months until performance has improved, but I don't think my PC can run the game anyway. I don't plan on upgrading my PC just to play Elden Ring and I'm in no rush to play the game.
I must apologize for refusing your friend request because I don't remember seeing your profile name or picture. I do remember a player who often wrote in Finnish on the DS3 forum, but not with that profile name and picture.
Version 1.08 of PvP Watchdog has been around for a long time. I have not used it in over a year so I'm not aware of whether it still does its (glitched) job of preventing player invasions. These days I would play offline. If I want jolly co-op, I would play online but remain un-embered until the boss fog wall. I would ask a co-op partner to place their summon sign near the boss fog wall, and I would then use an ember and look for their summon sign. Note that playing online is more dangerous these days because a malicious invader can reset your progress. In general, summon those whom you trust and keep an eye on the forum for trustworthy players.
NPC invasions in DS3 would still happen as long as: (1) the area boss is alive; and (2) you are in embered form. Doesn't matter whether you are playing online or offline.
Use Blue Sentinels and backup your save file. Those are the 2 essential things you should do when playing online in Dark Souls 3. There is also cridus' browser extension, which blocks thousands of known cheater accounts:

I previously used Blue Sentinels and PvP Watchdog (Blue Sentinels' precursor) when I was playing online and also did save backups. These days, I play mostly offline because of challenge runs. I still do save backups.

Thank you for your suggestion. The "Multi-Player Level Range Calculator" is not relevant to any of my guides for DS3. This would be useful in a guide on jolly co-operation with random players and password summoned phantoms. The "Dark Souls 3 Weapons Tier List" is also not relevant to any of the guides for DS3. I see it would be useful in a guide on PvP or a walkthrough of the PvE.

I don't use the Bloodborne HUD mod so I cannot vouch for it. The mod page does say that playing online with the mod can result in a ban. Generally, using a mod and playing offline is OK. It's that when you go online and forgot to remove the mod, your account would be flagged for a ban. Before going online, ensure you have removed the mod.
