Ingredients:
- 200g linguine or spaghetti
- 300g large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup unsalted butter
- Zest and juice of 1 lemon
- 1/4 cup fresh parsley, chopped
- 1/4 teaspoon red pepper flakes
- Salt and freshly ground black pepper
- Grated Parmesan cheese
Instructions:
1. Bring a pot of salted water to a boil. Add pasta and cook until al dente. Reserve 1/2 cup of pasta water.
2. Heat olive oil and butter over medium heat until butter is melted.
Add minced garlic and red pepper flakes, sauteing for about 1 minute.
3. Add shrimp and cook for 2-3 minutes until shrimp are pink and opaque.
4. Add lemon zest and juice, stirring to combine. Add cooked pasta and toss to coat in the sauce. If the mixture seems dry, add some of the reserved pasta water until you reach the desired consistency.
5. Season with salt and freshly ground black pepper to taste.
6. Garnish with chopped parsley and grated Parmesan cheese.
