Chicken. Use skinless, boneless chicken thighs for juicier kebabs. Chicken breast can be used as well.
Olive Oil. Or avocado oil.
Soy sauce.
Lemon Juice. Or apple cider vinegar.
Bell Peppers. Or other veggies of choice.
Garlic. Fresh is best.
Oregano.

Instructions
1. Place the chicken pieces in a large bowl and add the olive oil, garlic, soy sauce, oregano, green and red bell peppers, and lemon juice (or lemon zest). Mix everything well. Cover, and refrigerate for between 2 to 24 hours to let it marinate.

2. Preheat the grill to medium-high heat. Arrange the chicken and peppers onto the skewers and lay them on a baking sheet to take out to the hot grill.

3. Oil the grill grates. Cook for about 7 minutes on each side, until the chicken is well done.
