I've enjoyed Stellaris over the years, and come to look at the game as more of a platform that changes over time and DLCs. Some tips if the DLC bloat worries you:

- the base game is enough to get started and see if you like the basic mechanics
- the DLCs add mechanics and content, but aren't necessary for the start. If you've played enough of the base game to want more, they are easy ways to add hours of entertainment. Just remember that you don't need to get them all, if you don't want to.
- look into the Workshop. There's a lot of additional content in the mods for free.

Those being said, I'm interested to see how the co-op and new Leader systems will change the game in a week or so (May 2023). If it's not to my liking, there's always the option to rollback to previous versions in Steam. You can find that in the game settings on your library page.
