Paprike i patlidžan oprati i cijele peći u rerni ili na plati od šporeta, a mogu da se peku i na roštilju.
Zbog vremena koje je potrebno da se sve paprike i patlidžan ispeku, mogu se dan ranije ispeći. Nakon što prenoće u poklopljenoj šerpi paprika se lakše gule.
Nakon što paprike i patlidžan ogulite potrebno ih je samljeti na mašinu za meso.
Samljeti i bijeli luk.
Litru ulja staviti u veliku šeršpu ili kazan. Kada se zagrije u njega staviti samljevene pečene paprika i patlidžane. U procesu dinstanja dodavati još ulja, pošto patlidžan upija ulje.
Dodati so i šećer, a pred kraj prženja dodati još malo ulja i sirće, te po ukusu feferone ili chilli papričice.
Ajvar se kuha nekoliko sata uz stalno mješanje.
Vruć ajvar stavljati u vruće tegle koje ste zagrijali u rerni.
Tegle staviti na mračno i tamno mjesto.
