To make the pesto, combine basil, garlic, pine nuts and Parmesan in the bowl of a food processor; season with salt and pepper, to taste. With the motor running, add olive oil in a slow stream until emulsified; set aside. Store in an airtight container in the refrigerator for up to 1 week



You will need:

125g/4½oz pine nuts
125g/4½oz parmesan cheese (or a similar vegetarian hard cheese), cut into small chunks
1 large bunch fresh basil leaves
1 clove garlic, crushed with the flat side of a knife
200ml/7fl oz extra virgin olive oil
salt and freshly ground black pepper
squeeze lemon juice
