Dough: Mix 500 g flour, 1 egg, 250 ml warm water, and a pinch of salt. Knead until smooth, then let rest 30 minutes.
Filling: Choose your favorite: mashed potatoes with cheese, sautéed mushrooms, or minced meat. Season filling to taste.
Prepare Pierogi: Roll out dough thinly. Cut circles using a glass. Place a spoonful of filling in each circle, fold, and press edges tightly to seal.
Cook Pierogi: Boil salted water in a large pot. Drop in pierogi in batches, stir gently. When they float, cook 2-3 minutes more, then remove.
Optional: Sauté boiled pierogi in butter until golden. Serve with sour cream or fried onions.
